Key Responsibilities
- Coach and develop chefs and kitchen attendants
- Keep a positive, professional spirit in the kitchen
- Create modern Australian menus for the bistro, bar and events, and cost each one carefully
- Make sure every dish is presented consistently
- Organise event catering with the functions team, including prep, staffing and when food goes out
- Look after purchasing, stock levels, food costs, labour and waste within the agreed budgets
- Keep food safety, hygiene, allergen and WHS standards strict while cooking alongside the team in service and staying calm and organised under pressure
Requirements & Eligibility
- Experience working as a Head Chef or Kitchen Manager
- A solid background in hotel dining and high-volume functions or banqueting
- Good culinary skill together with sound financial judgement, and the ability to manage busy meal services alongside large events
- Clear communication, a practical attitude and a commitment to helping your team develop
- Certificate III in Commercial Cookery
- Food Safety Supervisor certification
