Your days would centre on the clay oven and the curry station, with time set aside to guide junior cooks and to try out new dishes for the menu. Key Responsibilities
- Oversee the Tandoor section from start to finish
- Prepare naan, roti, kebabs and tikka, plus other tandoori favourites
- Cook a wide variety of Indian curries, from classic recipes to contemporary ones
- Ready the marinades, gravies, sauces and stocks, and set up mise en place
- Keep dishes consistent, portions accurate and presentation neat
- Work quickly and calmly when service is high-volume
- Follow food safety and kitchen hygiene standards closely
- Keep wastage low and lend a hand with stock management
- Share ideas for menu development and new dishes, and support junior kitchen staff as they learn
Requirements & Eligibility
- Minimum of 5 years' relevant experience
- Strong experience working the Tandoor and Curry sections
- Excellent knowledge of Indian spices, marinades and cooking techniques
- Experience in a busy, high-volume restaurant, with strong knife and preparation skills
- Able to keep quality and consistency even under pressure
- Good understanding of food safety and hygiene
- Reliable and professional, with strong teamwork and communication
- Ready to work evenings and weekends as required
