General Manager
Trade · Gregory Hills, Sydney NSW, Australia · Full-Time · Discussed at interview
Ready to lead from day one? A newly established premium Italian restaurant in New South Wales needs a senior hospitality leader to shape a brand-new venue into a fully structured, high-performing operation.
This General Manager role is for someone who can point to real venue results, team leadership and past operational responsibility. Instead of simply keeping an established restaurant ticking over, you will help decide how the venue runs from the very beginning.
You will carry significant responsibility across the whole operation, from building the FOH structure and hiring the opening team to setting up systems, controlling costs and keeping service standards exceptional. Leadership gained in venues abroad or back home in the Philippines counts here.
Key Responsibilities
- Lead all pre-opening work so the venue is ready to operate
- Design workable FOH structures, floor plans and the flow of service
- Find, interview, onboard, train and grow a high-performing team for opening
- Make service expectations and performance standards clear to everyone
- Write SOPs and everyday operating procedures, and put opening and closing systems in place for the whole venue
- Lead big FOH and bar teams on the floor every day
- Build rosters around staffing needs and keep wage costs, labour spend and productivity under control
- Run the POS and other operational systems, Deputy included
- Look after the premium drinks side (wine, spirits and cocktails), watching beverage costs, GP, pricing and margins
- Take care of purchasing and supplier relationships, negotiating deals that support commercial outcomes
- Check on guest experience, service quality and how the operation is performing
- Make sure RSA, WHS and other restaurant compliance requirements are followed
- Spot where operations fall short and bring in solutions that work
- Coach managers and staff so the whole team delivers a consistent service culture
- Stay on the floor during service while keeping a commercial eye on the business
Requirements & Eligibility
- Strong track record at a senior level in hospitality or restaurant management, including running premium or high-volume restaurant operations
- Demonstrated experience in opening or setting up a new hospitality venue
- A verifiable history of venues you have managed, launched or led operationally, and a credible career history that demonstrates previous hospitality leadership
- Experience in charge of substantial FOH and bar teams
- Strong leadership, hiring and staff training experience
- Hands-on understanding of how a restaurant floor operates
- Strong knowledge of wine, spirits, cocktails and beverage service, plus experience managing beverage GP, costing, pricing and margins
- Practical know-how with rosters, labour budgets and wage control
- Experience using POS and restaurant management platforms
- Strong experience in purchasing and negotiating with suppliers
- A sound understanding of restaurant compliance, including RSA and WHS
- Able to build systems and procedures from the ground up
- Strong commercial awareness and sound operational decision-making
- Sponsorship available for the right candidate
